CORNMEAL PANCAKE RECIPE
Easy! Dairy-free! Sugar-free! :)
Matt and I care a lot about what we feed our daughter, and we will take it as far as we can as long as she will still eat it! In this case, we tweaked a common pancake recipe to include NO sugar and NO dairy. Guess what? She loved them (and so did I). I hope your family loves this easy recipe. Let us know in the comments!
1 1/3 cups all purpose flour
2/3 cup cornmeal
1/4 cup flax seed
4 teaspoons baking powder
1 teaspoon salt
1 tablespoon cinnamon
2 eggs (we use duck eggs to make them extra fluffy!)
1 1/3 cups water
1/4 cup olive oil or Canola Oil
1. Combine flour, cornmeal, flax seed, baking powder, cinnamon, and salt in bowl.
2. Mix in eggs, water, and oil. Add in ingredients while using mixer to thoroughly blend ingredients. Continue mixing for 1-2 minutes after ingredients are blended together for extra fluffy pancakes!
3. Use 1/4 measuring cup to pour on to hot, greased griddle. Turn when bubbles start to form on top, then flip and cook until golden brown.
4. Serve with plain butter, with syrup, fresh berries, or all of the above!
