As you all know, I love an easy recipe. If I can chop things up, throw it together with some spices, and have it on a plate within 30 minutes its a winner in my book. So when I recently found this fish taco recipe I was beyond happy. It is super fast, uses fresh, easy-to-find ingredients, and doesn't break the bank. The sauce MAKES it, and this can easily be bulked up by addng an avocado or throwing the mix in a burrito. The first time I even added shrimp. I am telling you, you cannot go wrong. Just try it! 4 Tilapia (we used frozen, individually wrapped that we thawed out prior to cooking)
1 small red onion (or 1/2 large), diced
1 small cabbage (or 1/2 large), chopped
1 mango, diced
2 roma tomatoes, diced
fresh garlic, minced (about 1 tbsp)
A few sprigs of fresh cilantro, chopped
1 lime, juice
Salt, pepper, Cumin, Cayenne Pepper
For the Sauce:
1/2 cup sour cream
1/3 cup mayo
1 lime, juice
1 tsp garlic powder
1 tbsp sriracha hot sauce (can be adjusted for spice preferences, we like ours with medium heat)
1. Preheat oven to 375. While the oven preheats, place fish on baking sheet lined with parchment. Drizzle olive oil over each piece, then add cayenne, cumin, salt, and pepper to both sides of tilapia. Bake at 375 for 20-25 minutes.
2. While fish is in the oven, dice and chop all other ingredients: onion, cabbage, mango, tomatoes, and cilantro. Combine in large bowl, then add some salt, pepper, and lime juice. Toss all the ingredients together.
3. Combine mayo, sour cream, sriracha, lime juice, and garlic powder in small bowl to make sauce.
4. Fish should be ready to come out! You can place the fish whole on top of a full bowl of the fresh salad, then drizzle with sauce. Or break fish apart to add to burrito, or to toss with all the other ingredients.
*Pro tip: There is never too much sauce. It is DELICIOUS.
Like I said in the beginning, you really can't go wrong here. When you are using nothing but great ingredients it is a guaranteed success. Bon appetite!
