Sweet Potato Apple Muffins

Ingredients

2 cups flour

3 tsp. baking powder

1 tsp salt

1 tsp ground cinnamon

1 tsp ground ginger

1 tsp nutmeg

1 tsp ground cloves

1/4 cup milk (or plain yogurt)

2 eggs

1 cup mashed sweet potato 

3 tbsp. olive/vegetable oil

1/3 cup honey or maple syrup

1 cup diced apple (tart varieties work best)

Struesel Topping (optional)

1/4 cup packed brown sugar

1/2 cup chopped pecans

1 tbsp melted butter

(Yields 18 muffins)

Directions

Preheat oven to 400 degrees. 

1. Mix all ingredients in medium sized bowl. Mixture should be like thick pancake batter.

2. Add mixture to greased muffin tin, or into paper liners. Add a small amount of water to any unfilled muffin slots.

3. Place in 400 degree oven and cook for 15-20 minutes. To test, stick toothpick in center of a muffin. Toothpick should come out clean.

To finish: Leave as is, add struesel topping, or do what we did- add homemade whipped cream! If using whip cream let cupcakes cool slightly before serving so it doesn't melt. If leaving alone or adding streusel, these are delicious served warm!
