Our daughter is tiny. She's super healthy, meeting all her milestones, etc., but at 13 months old and barely 18 pounds she has some growing to do. We have been working on finding healthy snacks to give her between meals in the hopes of stacking on some calories without sacrificing the health side.
These easy-to-bake cookies are a perfect solution! Other than making the mashed potatoes they take no time at all, and the ingredients are things we always have on hand. They have just enough sweetness to make her love them without me worrying about giving her too many. Bring them on a hike, to a park, or wherever your little one might need a snack!
1 1/3 cup mashed sweet potato
1 cup spinach
1 1/2 tsp baking powder
1 teaspoon baking soda
1 1/3 cups flour
1/2 cup coconut oil (slightly warmed)
Add some cinnamon to taste
1. Preheat oven to 350 degrees.
2. Mix all ingredients in bowl and use mixer on medium speed until all ingredients are blended together.
3. Scoop heaping spoonfuls onto ungreased cookie sheet. These do not spread out when baking so you can put them pretty close together.
4. Bake for 12 minutes. Let them cool on cookie sheet so the insides continue to cook slightly. They should end up soft in the middle but solid enough to transport to wherever you need to go!
