Zucchini Bread Recipe (includes low sugar alternative)

When we pulled 80 lbs of zucchini and squash out of the garden after our vacation I knew we had to find something to do with it! While this recipe doesn't call for too much zucchini, it was a delicious way to use some up! We have the full recipe up top, but there is a low-sugar option available below the picture.

Ingredients

Dry:

2 cups sugar

3 cups flour

1 tsp salt

1 1/2 tsp baking soda

1 tsp cinnamon

1/4 tsp baking powder

 

Wet:

1 cup oil

3 eggs

2 cups shredded zucchini

2 tsp vanilla

Optional

1/2 cup chopped walnuts 

 

Directions

*Preheat oven to 350 degrees. Grease two loaf tins. 

1. Blend all wet ingredients in a large mixing bowl. 

2. Mix dry ingredients in a medium mixing bowl.

3. Slowly add dry ingredients to wet ingredients while stirring. 

4. Once ingredients are fully blended, add walnuts if desired.

5. Pour mixture into two greased loaf pans.

6. Cook at 350 degrees for one hour. Let cool completely before removing loaf from pan and slicing. 

 

Low Sugar Ingredients

For the low-sugar recipe, we're cutting the sugar by more than half and adding a little extra cinnamon and vanilla. If you are looking to add some sweetness we highly suggesting serving the bread with applesauce or by spreading a light layer of yogurt on top before serving.

Dry:

3/4 cups sugar

3 1/4 cups flour

1 tsp salt

1 1/2 tsp baking soda

2 tsp cinnamon

1/4 tsp baking powder

 

Wet:

1 cup oil

3 duck eggs

2 cups shredded zucchini

1 tbsp. vanilla

Optional

1/2 cup chopped walnuts
