The Backstory Lately I have been back in the mode of "use what we have". This pandemic has reminded us about why we were moving towards self-sufficiency, and being in the thick of it really gave us a renewed motivation to put the work in sooner than later. Once I discovered frozen breakfast food my mornings got a whole lot easier! Camryn regularly has an assortment of pancakes and muffins in the freezer that I can throw in the microwave for 30 seconds and she loves it! Ingredients 2 cups flour 3 tsp. baking powder 1 tsp salt 1 tsp ground cinnamon 1 tsp ground ginger 1 tsp nutmeg 1 tsp ground cloves 1/4 cup milk (or plain yogurt) 2 eggs 1 cup mashed sweet potato  3 tbsp. olive/vegetable oil 1/3 cup honey or maple syrup 1 cup diced apple (tart varieties work best) Struesel Topping (optional) 1/4 cup packed brown sugar 1/2 cup chopped pecans 1 tbsp melted butter (Yields 18 muffins) Directions Preheat oven to 400 degrees.  1.
